Crustless Quiche Muffins

When my kiddos were younger, I was constantly on the search for easy but healthy breakfast ideas. They loved muffins and anything with lots of cheese.  They also loved quiche, so I came up with this fun little recipe which soon became a regular in our home. They are easy to eat on the go and full of yummy cheese and breakfast meat. The kicker here is they are also healthy and full of veggies that the kiddos will never realize are there.

Pre-heat oven to 350 degrees

Crustless Quiche Muffins

Yield: 12


  • 3 eggs
  • 5 egg whites
  • 1/2 cup shredded zuchinni
  • 1 cup finely chopped spinach
  • 1/4 cup grated onion
  • 1 cup shredded mozzarella cheese
  • 1/4 cup skim milk
  • 1 cup any breakfast meat cooked (ham, bacon, pancetta, sausage)
  • Salt and pepper to taste
  • Chopped parsley fro garnish


  1. Beat your eggs and egg whites well.
  2. Add your milk and salt and pepper followed by the rest of the ingredients.
  3. Spray your muffin tin with cooking spray liberally.
  4. I use a 1/4 cup measuring cup to portion mixture into each muffin cup.
  5. Bake at 350 degrees for about 20-25 minutes until slightly browned, puffed up and set in the middle.
  6. Remove from oven and let cool for a few minutes, then remove from muffin tin.
  7. Top with chopped parsley and serve.
  8. You can store these in a plastic bag inside your fridge for 1 week.
  9. Pull out and warm as desired.
